Filipino Macaroni Salad
Filipino Macaroni Salad Ingredients
1 lb small elbow macaroni
2 cups boiled chicken breast, cubed
2 cups pineapple tidbits
1 cup mayonnaise
1/2 cup condensed milk
1/2 cup carrots, fine
1 cup mild cheddar cheese, shredded
1/2 cup raisins
1/2 tsp salt
1/4 tsp freshly ground pepper
1/2 cup yellow onion, finely chopped
How to Cook Filipino Macaroni Salad
- Cook macaroni according to package directions; drain. Rinse in cold water.
- Meanwhile, add chicken to a large saucepan; cover with water. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until chicken is no longer pink, 12-15 minutes.
- Drain.
- Shred chicken and allow to cool.
- Cook carrots to a small saucepan; cover with water. Cook until tender, 5-7 minutes.
- Drain and allow to cool.
